Boil 1 cup water with 1 cup milk in a saucepan, add 2 tsp heaping chai mix.
Remove from heat, cover and brew for 3 to5 minutes.
Strain into warm cups, add sugar to taste.
You can add more tea or brew longer for a stronger Chai, though brewing too long may add a bitter taste.
In a heated teapot, add 2 tsp Rooibos Chai tea ( Heaping if desired stronger),
pour 2 cups of boiling water and brew 3-5 minutes.
Add milk and sugar if you like or enjoy straight.
VARIATIONS & RECOMMENDATIONS
You can substitute milk with either Almond, Soy, Coconut, Hemp, Rice or other non dairy milk – or drink it straight.
The Rooibos Chai is makes for a nice night-time cup in the winter without worry of caffeine keeping you up all night.
Sugar is obviously optional. Variations like honey or agave will alter the flavor a bit.
One nice option to add a fresh spicy touch is to add a chunk of fresh ginger to your brew. A good method is to cut a piece of ginger, then smack it with the flat end of your knife (carefully) or even the bottom of a small heavy pan, and throw it in to brew with the tea.
